Ingredients (for 2 servings):
• 2 medium apples (e.g., Granny Smith or Honeycrisp)
• 1/4 cup walnuts, chopped
• 1 teaspoon ground cinnamon
• 1 tablespoon honey or maple syrup (optional, for sweetness)
• 1/2 cup Greek yogurt (plain or vanilla)
• 1/2 teaspoon vanilla extract (optional)
Instructions:
1. Preheat the Oven:
◦ Preheat your oven to 350°F (175°C).
2. Prepare the Apples:
◦ Core the apples, making sure to leave the bottom intact to hold the filling. You can
use an apple corer or a knife.
3. Mix the Filling:
◦ In a small bowl, combine the chopped walnuts, cinnamon, and honey (if using).
Mix well.
4. Stuff the Apples:
◦ Place the cored apples in a baking dish. Fill each apple with the walnut mixture.
5. Bake:
◦ Bake in the preheated oven for about 20-25 minutes, or until the apples are tender
but not mushy. The cooking time may vary based on the size of the apples.
6. Serve:
◦ Remove from the oven and let cool slightly. Serve warm with a dollop of Greek
yogurt on top. If desired, you can mix the yogurt with vanilla extract for extra
flavor.
