Ingredients (for 2 servings):
• 8 oz lean beef strips (sirloin or flank steak)
• 2 cups fresh spinach
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1 medium onion, sliced
• Salt and pepper to taste
• Optional: 1 cup cauliflower rice for serving
Instructions:
1. Prepare the Ingredients: Slice the onion and mince the garlic. If using cauliflower rice,
prepare it according to your preferred method (store-bought or homemade).
2. Sauté the Onions and Garlic:
◦ In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
◦ Add the sliced onions and sauté for about 3-4 minutes until they begin to soften.
◦ Add the minced garlic and cook for an additional 30 seconds until fragrant.
3. Cook the Beef:
◦ Push the onions and garlic to the side of the skillet.
◦ Add the remaining tablespoon of olive oil and the lean beef strips.
◦ Cook for about 5-7 minutes, stirring frequently until the beef is browned and
cooked through. Season with salt and pepper.
4. Add Spinach:
◦ Once the beef is cooked, add the fresh spinach to the skillet.
◦ Stir and cook for an additional 2-3 minutes until the spinach is wilted.
5. Serve:
◦ If using cauliflower rice, divide it between two plates. Top with the beef and
spinach stir-fry.
