Beef and Vegetable Skewers

Ingredients (for 2 servings):

• 8 oz lean beef (sirloin or tenderloin), cut into 1-inch chunks
• 1 large bell pepper (any color), cut into 1-inch pieces
• 1 cup cherry tomatoes (about 12-15)
• 1 medium onion, cut into 1-inch chunks
• 2 tablespoons olive oil
• 1 teaspoon garlic powder
• 1 teaspoon dried Italian herbs (or your favorite spice blend)
• Salt and pepper to taste
• Wood or metal skewers (if using wooden skewers, soak them in water for 30 minutes
before grilling)

Instructions:

1. Prepare the Marinade:
◦ In a bowl, combine olive oil, garlic powder, dried herbs, salt, and pepper. Add the
beef chunks and toss to coat. Let marinate for at least 15-30 minutes.
2. Preheat the Grill:
◦ Preheat your grill or grill pan over medium-high heat.
3. Assemble the Skewers:
◦ Thread the marinated beef chunks, bell pepper pieces, cherry tomatoes, and onion
chunks onto the skewers, alternating as you go.
4. Grill the Skewers:
◦ Place the skewers on the grill. Cook for about 10-12 minutes, turning
occasionally, until the beef is cooked to your desired level of doneness (145°F for
medium-rare).
5. Serve:
◦ Serve the skewers with a side salad for a balanced meal.
