• 4 oz cooked chicken breast, diced
• 2 cups cauliflower rice
• 1 cup mixed vegetables (peas, carrots, corn)
• 2 eggs, scrambled
• 1 tbsp soy sauce (low sodium)
• 1 tsp sesame oil
Instructions:
1. In a skillet, heat sesame oil. Add cauliflower rice and mixed vegetables, sauté for 5
minutes.
2. Push to one side, scramble eggs on the other side, then mix everything together. Add
chicken and soy sauce, cooking until heated through.
