Ingredients (for about 12 cookies):
• 1/2 cup coconut flour
• 1/2 cup almond flour
• 2 large eggs
• 1/4 cup coconut oil or unsalted butter, melted
• 1/4 cup honey or maple syrup
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup dark chocolate chips (sugar-free if desired)
• 1 teaspoon vanilla extract
Instructions:
1. Preheat the Oven:
◦ Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix the Ingredients:
◦ In a large bowl, combine the coconut flour, almond flour, baking soda, and salt.
Mix well.
◦ In another bowl, whisk together the eggs, melted coconut oil (or butter), honey (or
maple syrup), and vanilla extract until smooth.
◦ Pour the wet ingredients into the dry ingredients and stir until well combined.
Fold in the dark chocolate chips.
3. Form the Cookies:
◦ Using a tablespoon or cookie scoop, drop the dough onto the prepared baking
sheet, leaving space between each cookie as they will spread a little.
4. Bake:
◦ Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly
golden.
5. Cool:
◦ Allow the cookies to cool on the baking sheet for about 5 minutes before
