• 1/2 cup cooked quinoa
• 4 oz ground turkey or chicken
• 1/2 cup spinach, chopped
• 1/4 cup marinara sauce
• 1/4 cup shredded mozzarella (optional)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Sauté ground turkey until cooked through. Add spinach and cook until wilted.
3. Mix in cooked quinoa and marinara sauce.
4. Stuff the mushroom caps with the mixture and top with mozzarella if desired. Bake for 20
minutes.
