Whole Grain Wraps

Ingredients (for 2 wraps):

• 2 whole grain tortillas (8-inch)
• 4 large eggs
• 1/2 cup cooked turkey (sliced or shredded)
• 1/2 cup bell peppers (diced)
• 1/4 cup spinach (fresh, chopped)
• 1/4 cup shredded cheese (optional)
• Salt and pepper to taste
• Cooking spray or olive oil for cooking

Instructions:

1. Scramble the Eggs: In a bowl, whisk the eggs with salt and pepper. Heat a non-stick
skillet over medium heat and lightly coat with cooking spray or oil. Pour in the eggs and
scramble until fully cooked. Remove from heat.
2. Prepare the Filling: In a mixing bowl, combine the scrambled eggs, cooked turkey,
diced bell peppers, spinach, and cheese (if using). Mix until well combined.
3. Assemble the Wraps: Lay out the whole grain tortillas. Divide the egg mixture evenly
between the two tortillas. Roll each tortilla tightly, tucking in the sides as you go to create
a wrap.
4. Slice and Serve: Slice each wrap in half and enjoy immediately, or wrap in foil for a
portable breakfast.
