Zucchini Noodles with Grilled Shrimp

Ingredients (for 2 servings):

• 8 oz shrimp (peeled and deveined)
• 2 medium zucchini (spiralized, about 4 cups)
• 2 tablespoons olive oil, divided
• 3 cloves garlic, minced
• Salt and pepper to taste
• Optional: red pepper flakes or lemon wedges for serving

Instructions:

1. Prepare the Shrimp:
◦ Preheat your grill or grill pan over medium-high heat.
◦ Toss the shrimp in 1 tablespoon of olive oil, salt, and pepper. If desired, add red
pepper flakes for some heat.
◦ Grill the shrimp for about 2-3 minutes on each side, until they are opaque and
cooked through. Remove from heat and set aside.
2. Sauté the Zucchini Noodles:
◦ In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
◦ Add the minced garlic and sauté for about 30 seconds until fragrant.
◦ Add the spiralized zucchini noodles and cook for 2-3 minutes, stirring frequently,
until they are slightly softened but still al dente. Season with salt and pepper.
3. Combine:
◦ Add the grilled shrimp to the skillet with the zucchini noodles and toss to
combine. Cook for an additional minute to warm everything through.
4. Serve:
◦ Divide the zucchini noodles and shrimp between two plates. Optionally, serve
with lemon wedges for squeezing over the top.
